Quince

This unusual pomme fruit needs to be cooked to be eaten or it will be too hard to eat or digest. It is bursting with naturally occurring pectin thickeners. Once cooked, it takes on a sweet, floral, citrusy flavour, and even changes colour to a pink or rosy red.
