Kale

In the winter, kale tops remain as a nourishing leafy green. This time of year the curls are tight, a little lighter in colour with the cold, with short stems (the lower, longer stems were harvested first in the fall). Grown in no-till fields with microbial-rich soil, this kale has soaked in the goodness of the land. Loaded with antioxidants like beta-carotene and vitamin C, plus too many minerals to name, this superfood is as nourishing as it is colourful.
