Microgreens are basically plants that are snipped at the base when they’re still very small. But why bother? Why not eat the plants when they're full grown.

Strangely enough, microgreens pack in about 4-40 times more nutrients per bite than fully grown plants. What kinds of nutrients?

  • Polyphenols, an antioxidant that helps you think and reason.
  • Iron, which helps your blood deliver oxygen to your muscles.
  • Folic acid, an essential vitamin for expectant mothers.
  • Vitamin K. to keep bones strong and prevent calcium buildup.
  • Magnesium, crucial to 300+ enzyme reactions in the body.

Chuck a small handful of microgreens on your food, and you get an added boost of vitamins and minerals in your meal. Try them with sandwiches, soups, and salads. 

Not to get TMI, but microgreens are the perfect roughage to feed your own gut microbiome. They are a prebiotic that nurtures the healthy flora inside your intestines, aiding in digestion and vitamin absorption. You'll be less bloated and things will, you know, move along more comfortably.

Are these microgreen considered regeneratively farmed? Depends on how you slice it. We grown these greens ourselves in a nifty UV light greenhouse, using organic coconut mulch as their soil. Our growing unit is on the pasture-raised egg farm, but isn't part of a wider system that's interacting with livestock - except when we feed extras to the chickens.
